How to Make No Bake Crunchies - No Wheat Dessert - Cornflakes Drop Cookies

Certain allergies and medical conditions can restrict wheat in some people's diet, which can make finding desserts to make difficult. No-bake cookies don't require flour, so many of the recipes are wheat free. Cornflake drop cookies require less than a handful of ingredients, so it is likely you already have most of what you need to make them in your cupboard. Once you gather the ingredients you can toss them together in just a few minutes time. Add this to my Recipe Box.

Instructions

    Put 1 cup of confectioner's sugar in a mixing bowl and sift it.

    Place your double boiler on the stove. Fill the bottom portion of the double boiler halfway with water.

    Combine 1 1/4 cup peanut butter, 1 cup of sifted confectioners sugar and 6 oz. chocolate, or butterscotch chips in the top half of your double boiler.

    Bring the water in the bottom of the pot to a boil. Allow the contents in the top to cook until they are liquefied. Stir continuously to blend the ingredients and prevent uneven cooking.

    Remove the double boiler from heat and stir the cornflakes into the ingredients in the top of the double boiler gradually. Keep stirring until all the cornflakes are completely stirred in and covered in the liquid mixture.

    Drop the cornflakes mixture on to a sheet of wax paper by the teaspoonful. Use your fingers to gently form the spooned lumps into cookies.

    Allow the cookies to cool completely before serving.
