How to Make Fresh Fruit Kabobs

For a fun and attractive alternative to fruit salad, thread fresh fruit onto kabob skewers. These kabobs make great appetizers for dinner guests, refreshing treats at a picnic or colorful and healthy after-school snacks. This recipe makes 12 servings, with two skewers of fruit and 2 ounces of dip per person. Add this to my Recipe Box.

    Prepare all of the fruit. Cut the banana, pineapple, cantaloupe and melon into 1-inch chunks. Halve the strawberries.

    Dip the banana slices into cold water that contains a little bit of lemon juice. This will prevent discoloration.

    Arrange the fruit on the skewers; each skewer should contain one piece of each type of fruit. How you arrange the fruit is up to you. Use the same combination for all of the kabobs or change up the combinations for visual variety.

    Make a dip. Combine 1 3/4 cup nonfat yogurt, 1 3/4 cup low-fat cottage cheese, 1/4 cup honey, 2 1/2 tbsp. lemon juice, 1/4 cup pureed pears, 1/2 tsp. cinnamon and 1/4 tsp. salt. Mix the ingredients thoroughly. Cover and chill.
