The hedgehog mushroom (Hydnum repandum) is an edible fungus that grows naturally in the forests of North America. Its flavor is described as sweet and nutty or reminiscent of lobster or shrimp. Gourmet cooks prize the mushroom for its firm texture. According to the Non-Timber Forest Products, hedgehogs are also known as sweet tooth mushroom or pig's trotter. Drill holes into the logs by using your power drill and 5/16-inch drill bit. Drill the holes slightly deeper than the length of the spawn plugs. Drill the holes in an offset diamond pattern rather than in straight rows, 3 to 5 inches apart. Drill holes on the top and sides of the logs, but not on the bottom, as this surface will be in contact with the ground.
2Insert the mushroom spawn plugs into each of the holes -- one plug per hole -- by tapping them in firmly with the rubber mallet. The plugs should fit firmly with no gaps.
3Light the candle with the lighter and tip the candle, allowing beeswax to drip into and over each of the plugs until they are well sealed. Seal well -- this coating protects the mushroom spawn from excess moisture, mold, insects and parasites.
4Arrange the logs in a shady, damp area with the undrilled side down. Other than a light misting if the area is dry, no further care is needed for mushrooms to grow.
