Thanks to its naturally thick skin, winter squash typically stays good for longer than thin-skinned summer squash varieties. As a winter squash, whole spaghetti squash can stay good for three to six months with proper storage. Once you cut it open, however, you must either use it much more quickly or freeze it. In any of these instances, proper storage technique is essential in extending the spaghetti squash's life. Add this to my Recipe Box.

Leave the whole spaghetti squash at room temperature for approximately two to three weeks if you wish to store it whole for several months. After this period, move the squash to a dark, dry area where the temperature stays between approximately 45 and 50 degrees Fahrenheit. You can keep the squash for up to six months under these conditions.
2Wrap cut pieces of spaghetti squash tightly in plastic wrap. Do not leave any gaps that would allow air to come into contact with the squash's flesh. Place the wrapped piece or pieces of spaghetti squash into the refrigerator. Use refrigerated spaghetti squash within one to two days.
3Cut your spaghetti squash into pieces if you wish to freeze it. Seal each piece in an airtight freezer-safe container, then place them into the freezer. Alternatively, cook the squash before you freeze it. This allows you to thaw, reheat and consume it without needing to cook it later. Frozen spaghetti squash stays good for up to a year.
